Velvet Antler Bull elk develop antler each year, beginning with their second full year of life. The antler begins to grow in mid-spring, and in its early stages, is covered with "velvet". As time goes on, the antler matures, and the velvet is eventually shed, yielding the hard antler rack traditionally associated with bull elk. The bulls retain the hard antler through the fall mating season and the next winter. In spring (about March), the animal loses its rack (it just drops off), and the process is repeated.
For more than 2000 years, velvet antler has been used in Oriental medicines and tonics. The Chinese, Japanese, and Korean traditions, for example, all make use of velvet antler, cut from the animal before it progresses to the hard antler stage. Different traditions have selected different antler. The Chinese, for instance, prefer Sika deer antler. The Koreans prefer elk, and in the past, virtually all of North America's velvet antler from elk has been sold to the Korean market.
A typical bull elk will produce approximately 12 pounds of velvet antler per year on average. Some will produce considerably more – in the range of 30 or more pounds per animal. As the animal matures (elk live roughly 15 to 25 years on a farm), the antler production increases steadily, creating a long-term, renewable resource.
The antler is cut from the bull elk during the spring, roughly 60 to 70 days after antler formation begins, in a process that entails no injury and no pain to the animal. The antler is then frozen, and subsequently dried prior to processing. The resulting antler is then either sold whole as a traditional medicine, or is ground up, placed in capsules and sold as a dietary supplement.
